Light & Easy Buckwheat Pancakes With Strawberry Coulis

These Buckwheat Pancakes With Strawberry Coulis are light and easy; they are naturally dairy, gluten and oil free! These delicious buckwheat pancakes make any breakfast truly special. This great tasting recipe is perfect for a special occasion breakfast or brunch for company as well as the family. NOTES: Purchased or homemade buckwheat flour maybe used.  Depending on the amount of liquid added to the batter, the pancakes maybe thick or thin; if thick they maybe served in a stack. If made thin, they maybe rolled up with the coulis inside. The pancakes taste absolutely fabulous either way.  Apples, pears, bananas, or blueberries maybe added to the batter just before preparing the pancakes. Instead of the strawberries, other fruit maybe prepared as a coulis. Leftover pancakes maybe stored in the fridge or frozen for longer storage. Pancakes maybe reheated in the skillet or oven. Strawberry Sharbat/Cooler (Agua Fresca)

I recently received gifts of beautiful homegrown limes and freshly picked luscious strawberries. When life brings you limes, you make limeade; but when you get both limes and strawberries, you make strawberry sharbat :D! Every country and cuisine has its own special cooling beverages or Agua Frescas to counteract warm and sultry weather. In India, delicious and refreshing coolers called sharbats are made from various ingredients including fruits - the classic ones being Nimbu Sharbat (Limeade) and Lassi (a yogurt beverage) - pronounced Luh-ssi and not lassie. Stevia extract is a natural sweetner made from the Stevia plant that works well with acidic ingredients; it adds sweetness without a lot of calories. It is available as liquid or fine powders; I prefer the liquid type as it has the least aftertaste according to my taste. If preferred, the sharbat can be made with regular sugar as well. Whichever way it is made, strawberry sharbat should taste limey but balanced in its taste...

Deepa's Quick Strawberry Jam

Deepa sent this recipe in her Thathi's memory; Thathi was always game to try new fruits or veggies and would have loved this beautiful jam. Strawberry jam is quick and easy to prepare - it is ready in minutes! Fresh strawberries are incomparable for exuding the essence of spring but if fresh strawberries are unavailable, use frozen. It is delicious as a topping for biscuits, muffins, scones, etc. Ingredients: 1 box of Fresh Strawberries (2 cups), diced 2 Tbsp Butter 3-4 Tbsp Sugar Method: Heat butter and sugar together in a small pan until melted. Stir in the strawberries, mix well and cook covered over low heat for about 5 minutes. Serve hot over pancakes or spread on toast. Enjoy! :D
