Cauliflower Lemon "Rice" (Grain-Free Lemon "Rice") is a delicious alternative to the fun and fabulous traditional Lemon Rice using finely chopped (riced) cauliflower instead of rice. This is a delectable recipe that is easy for family meals or potlucks. Serve Cauliflower Lemon "Rice" with crunchy papadams and your favorite curries as well as   Lemon Rice , Tamarind , or Yogurt Rice . To live for!! Note:  Heat the cauliflower just until heated through; remove promptly from heat as soon as it reaches desired tenderness. Since the cauliflower is finely chopped, it will become mushy if cooked too long. Lebanese style Tabbouleh - Gluten Free With Quinoa & Cauliflower

This fresh tasting Tabbouleh makes a light meal or a refreshing snack/starter; offer with other wonderful Middle Eastern dishes such as Dolma (Rice stuffed Grape Leaves), Smoky Red Pepper OR  Regular  Hummus , White Bean Dip , Vegetable Caviar , Baba Ghanoush, etc for a more substantial meal. Notes:  This recipe maybe doubled or tripled etc as needed. Tabbouleh tastes fresh and is best enjoyed within a couple of days of making. Wow, no fat added in this luscious Aloo Gobhi - an all time favorite dish you can enjoy guilt free! Roasting leaves one free to do other things. If you wish, Aloo Gobhi maybe cooked on stove top; cook in a skillet or Dutch Oven with a tight-fitting lid on low heat until the veggies are tender and then uncover to finish cooking for the moisture to evaporate a bit so the veggies are not soggy. Achards de Legumes  This recipe is very similar to Hema's Vegetable Achar ; both are based on Mauritian fare. We love heaping up achards on toast or a roll for a very satisfying repast whether at breakfast, lunch, or a yummy snack any time. The pictures show Achards made without cauliflower but all the other ingredients - so you see that the recipe is quite flexible :) Cauliflower and turnips are good on an anti-inflammatory diet, so I thought of making the "Achards" (as it is called in Mauritius) with them instead of the cabbage. I was told that in Mauritius, they sell Achards de Legumes and freshly baked bread before the grocery stores open! What a great idea! Roasted Cauliflower and Broccoli with Cumin

Roasted Cauliflower I had a huge cauliflower and a bunch of broccoli that I wanted to use up; since I was quite busy,  I wanted an easy option with minimal prep and came up with this idea. Cauliflower and broccoli are fantastic roasted; the wonderful Kerala spice combination of cumin, coriander and red pepper really compliments their flavors. The amchoor (ground dried green mangoes) or sumac adds the perfect tartness making a good thing even better. Turned out so delicious, that it vanished without a trace :). Broccoli and the stems from the veggies cook a little quicker; so add them to the pan after the cauliflower has been cooking for 10 minutes and finish cooking all the veggies. Another delicious option is to sprinkle the roasted veggies with Chaat Masala and fresh lime juice after roasting; if using chaat masala, use minimal salt while roasting as the masala has lots of salt in it. A great and tasty side dish or filling for parathas and roll-ups! The dry fenugreek leaves and the combination of spices make this an uncommonly delicious curry. You can cook this dish two ways: if you stir-fry only partially covered, you will have a dry curry; if you cook it covered most of the time, you will have a bit juicier curry. Make mashed cauliflower instead of potatoes! It is guaranteed to be a taste treat and a healthy alternative to the traditional mashed potatoes. It is quite satisfying and the best thing is it is good for you! For a variation, saute one tablespoon finely chopped ginger (and more green chilies if you like it really spicy) with the onion mixture; then add 1/2 tsp turmeric and 2 finely chopped tomatoes and cook until they are soft before adding the cauliflower. Chopped cilantro is another flavorful addition stirred in just before serving. Serve hot sprinkled with one teaspoon Garam Masala or freshly ground toasted cumin seeds. Eggplant Upperi, Cauliflower Upperi, Simple Dal , Rice, and Cherry Tomatoes with Creamy Cilantro Dressing Upperi is a simple, traditional, everyday, vegetable side dish from Kerala. It might be a contraction of 'upakari' or 'upkari' which means side curry. Whatever the origins of the word, the dish is delicious and simple to make. There are two types of Upperi; one being a vegetable side dish and the other actually crisp chips or wafers from mainly plantain bananas and unripe jack fruits. Chips are also made from manioc or cassava roots, arbi corms, a true yam called chenai, bitter melons (parikkai), and of course potatoes - regular or sweet. Many vegetables such as unripe green bananas, bitter melons, broccoli, Brussels sprouts, green unripe papayas, green beans, cabbage, okra, eggplants, potatoes, bell peppers (capsicums), etc are all good candidates for making Upperi. Serve with rice or roti (a whole grain flat bread also known as chapati), some dal/bean dish and/or some plain yogurt to provide a nutritious meal. It makes a wonderful veggie wrap rolled up in a Chapati or Whole Wheat Tortilla with a little Cheddar, Jack, Parmesan, or Goatmilk cheese. Dals are split and skinned dry beans.
