Roasted Tofu

Roasted Tofu is wonderful by itself or can be added to other dishes like mattar paneer , Sag Paneer , Spring Rolls , Pasta , Autumn Roasted Vegetables , Fried Rice , etc. Tofu ready for roasting Ingredients: 1 block Firm Tofu (14 oz) 1/2 medium Red Onion 1 clove Garlic (optional) 1 Tbsp Extra Virgin Olive Oil 1/4 tsp Turmeric Freshly ground Black Pepper 1 -2 pinches Cayenne OR Red Pepper Flakes 2-3 Fresh Rosemary sprigs 4-5 Fresh Thyme sprigs 1/2 tsp Sea Salt 1 Tbsp Soy Sauce, or to taste Method: Drain the tofu well and cut into bite-sized cubes. Place in a rimmed baking pan coated lightly with oil. The baking pan should accommodate the tofu in one layer. Mince the onion and the garlic if using, and sprinkle over the tofu. Sprinkle the salt, cayenne and turmeric, and a generous grinding of black pepper. Drizzle the oil and soy sauce all over; toss to coat evenly and set aside to marinate for 30 minutes (tofu may be marinated overnight also)....

Thyme-Scented Toasted Almond Nibbles

Thyme-scented Almonds are a wonderful snack or starter. They also make a delicious and different garnish for all types of dishes including salads and spreads. Herb scented almonds are very easy to make and can be made up to one week ahead. Ingredients: 2 tsp Extra Virgin Olive Oil 1 cup Almonds 2 or 3 sprigs fresh Thyme 1/4 tsp Red pepper flakes or more 1/4 tsp Sea Salt Method: Heat olive oil in a wok or skillet. Add the almonds and stir for a 3 or 4 minutes. Sprinkle pepper flakes and chopped thyme with the salt. Cook stirring until almonds are toasted and golden. Cool and store in an airtight container until ready to serve. Enjoy! Freeze the almonds for longer storage. Almost Turkish White Bean Soup/Stew (Kuru Fasulye)

Another wonderful bean soup/stew! Although beans originally came from the Americas (one of the "three sisters" - the other two being corn and squash), they have been adopted and are favorites in India as well as the countries around the Mediterranean. Use Cannellini, Great Northern, small Lima, or Navy beans - in short any white bean will do :D. White bean soups and stews are very popular all around the Mediterranean. Althought Kuru Fasulye is similar in that it is made with white beans, it is deliciously different from the Greek Fasolatha .  This is an almost Turkish version as I have tried to recreate the wonderful taste of some of this soup/stew we had in Turkey where it is called "Kuru Fasulye". I have added turmeric as it adds its amazing medicinal qualities without changing the flavor of the dish. Fasolatha (Greek White Bean Soup)

Fasolatha, a simple, but wonderfully flavorful and satisfying soup is served all over Greece. It is amazing tasting with just a few basic ingredients. Greeks are very generous with the olive oil; I prefer a moderate amount. I have also added turmeric to make sure we get our daily dose of curcumin to keep our brains healthy - as you know "a little turmeric a day keeps lesions away"! A variety of beans called "gigantes" are used in Greece; they look like large lima beans. I used Great Northern beans here but have also used large Lima beans with great results. A good quality tomato paste may be used if fresh tomatoes are unavailable. Use about 2 to 3 Tablespoons in the recipe. When Paji wanted a nice South Indian breakfast and I did not have any freshly ground batter, I quickly made up this recipe. Much to my delight, the adais turned out even better than I had anticipated.
