Nutmeg-scented Wholegrain Pear Muffins

Image
Nutmeg-scented Wholegrain Pear Muffins are gluten and dairy free; they are oil-free also if you omit the optional oil. These wholesome muffins are as delicious and tender as they are nutritious. They are one of our favorites for breakfast or tea time. Do add the chia and flax seeds for the added nutrition if you can. When pears begin to get soft and squishy, don't throw them on the compost heap; save them to make these fabulous muffins! You can use any variety of pears for these; I have used a large brown Bosc , Bartlett or the Anjou variety; all are great. I have not tried it with the crisp Asian pears - they don't stick around, we enjoy them fresh and crisp! If you'd like a version of muffins using whole wheat flour, here's the recipe . Nutmeg-scented Pear Muffins Makes 12 large muffins Ingredients: 2 cups Whole Grain Old fashioned Oats (gluten free) 1/2 cup Almond meal 1 Tbsp Chia Seeds (Optional) 1 Tbsp Flax seeds (optional) 1/3 - 1/2 Cup...

Jam Bars (Buttery Cookie Bars With Fruity Filling)

Image
Jam Bar With Persimmon Preserves Jam Bars are quick and easy to make especially if you use a food processor. Although you can use any jam, a bit tart one such as raspberry tastes best. If you do use very sweet jams, then I would reduce the sugar a little so that there will be a nice contrast between the crust and the filling - very sweet filling + very sweet crust = cloyingly sweet bar. You can vary the citrus zests - orange, lemon, tangerine, etc. - depending on the jams you use. I used the homemade Persimmon-Apple Preserves (the only one I had) and added orange zest which complimented the persimmon preserves quite well. On another occasion I used lemon zest with the persimmon-apples preserves and again it turned out to be a perfectly delectable dessert! For a super-rich dessert, I am planning to serve it next time with creme fraiche or vanilla ice cream and fresh berries. So go forth and try it any way you like :D. 24 bars Ingredients: 2 cups Whole Wheat Flour 3/4 cups (1 1/2 s...

Oats Kanji A La Shobhaa (Sweet/Savory Porridge)

Versatile and nutritious, oats kanji is wholesome and quick to make. Oats, whether rolled into flakes or steelcut, are rich in fiber - especially the soluble kind which helps reduce cholesterol and the other minerals, vitamins, and phytochemicals in them reduce the risk of many diseases and promote health in various ways. Oats always conjures up feelings of comfort and love for me. I used to be the "dubbawali"*, carrying the sweet oats kanji for my grandfather's special breakfast. My grandmother made it with lots of fresh milk and sugar. As my grandfather was long gone from the house to oversee the many activities on his farm, I was usually entrusted with taking the kanji to him. The job was not without its merits - grandfather always insisted on sharing some of the delicious kanji with me ;). Mm, What a treat!! Our other grandfather had oats kanji with milk and a banana every day too - he had it in the evening for his supper! He had given up regular food for hi...

Basic Apple Crisp (Baked Apple Slices With Crumble Topping)

Apple Crisp is one of the most satisfying of simple desserts. I made one today with the help of all the little ones and everyone loved the making as much as the eating!! It is a pretty healthy dessert with very little fat and sugar - so one does not have to feel too guilty about indulging in this one on occasion. My friend Linola insists that Macintosh is the best apple for the job. I have used green Granny Smith or Pippin or the Golden Delicious also with good results. Today we used an assortment of apples - whatever the children brought; the crisp turned out absolutely delicious. Try them all and see for yourself and let me know what your favorite apples are :). Use freshly grated nutmeg if you can as it is much more flavorful than the already ground one because once ground, spices lose their volatile oils and out goes the flavor. Keep the whole nutmegs in an air-tight jar to use as needed. Whole Wheat flour, Unbleached flour, and whole nutmegs are available at most markets. 8 Se...

Chocolate Chango Bars II (Eggless Cookie Bars)

After reading this post, I used ground up flax seeds as egg replacement and wow! it was the best batch of Chango Bars yet- somehow moister and chewier and altogether seriously yummy. And since there are no raw eggs, no worries about Salmonella poisoning either if you like eating the uncooked cookie dough :). I got a bag of whole flax seeds and give them a whirl in my coffee spice grinder as needed: one Tbsp flax seeds plus 2 Tbsp water for each egg called for in the recipe. I had been using cornstarch plus water for a long time but now that I have discovered flax seeds, I prefer that over the cornstarch since they add nutritive value too. While I was cutting out the eggs, I cut out the oil too from my first version of Chocolate Chango Bars without any adverse effects; so now we have a healthier (fat and cholesterol reduced) as well as a better tasting recipe. Ingredients: 1/2 cup Unsalted Butter, melted 2 cups Brown Sugar, loosely packed 3 Tbsp Flax seeds, ground plus 1/2 cup wat...
