Buttery Chickpeas ( Vegan Garbanzo Bean Stew)

Vegan Buttery Chickpeas is a delicious entree that works well for batch cooking, it keeps in the fridge for a week or freezes for up to 3 months. Although there is no butter nor any dairy ingrediens, the cashew cream adds the rich buttery and creamy taste. The sauce is wonderful as a base for Vegan Chik'n chunks/strips, Soy Curls, Tofu cubes, Cauliflower florets, etc also. Vegan Buttery Chickpeas doesn't need much to complete the meal; a platter of fresh sliced veggies and hot cooked rice/grains or roti/naan will make it a feast. If you have either the chickpeas or the sauce made ahead, it goes together very quickly. Notes: Preparing Chiles: Core and discard it with any seeds and whitish ribs (the heat source with the most amount of Capsaicin) unless you want a spicy curry. Garam Masala, ginger, and cayenne contribute enough spice so try the recipe with cored chiles first and then decide if you want to take it up a notch with the whole chiles and/or more cayenne. Rice Noodles/Sevai II - Puli (Tamarind) & Thair (Yogurt) Sevai

Puli (Tamarind) & Thayir (Yogurt) Sevai are delicious South Indian gluten-free Rice Noodle treats, prepared for breakfast, brunch, lunch or dinner. These make fabulous picnic fare as they travel well and can be enjoyed at room temperature. Dried rice noodles, readily available in Indian and Asian Markets, make quick work of making these wonderful dishes.  Once you have cooked the plain sevai (rice noodles), it is transformed by adding the appropriate ingredients.  Puli (Tamarind) Sevai is one of our all time  favorites as is  Thair (Yogurt) Sevai. Both are prepared in similar ways as Tamarind Rice   and  "Yogurt" Rice . Plain Sevai 8 oz dry Rice Sevai aka Rice Noodles or Sticks Prepare the sevai according to the package directions and drain well. Sevai or Rice Noodles are popular South Indian dishes one can cook up in a jiffy nowadays with dried rice nooldes for a quick and delicious gluten-free treat for breakfast, brunch, lunch or dinner! Plain dried rice noodles are readily available in Indian and Asian Markets. Simple sevai is delicious but the Lemony and Coconut Sevai are simply fabulous with their tangy and aromatic flavors respectively. It is quite amazing how the addition of one or two ingredients transform the plain into sublime! Traditional Lemony Sevai does not contain any veggies; but I love to add them sometimes.  Once you have cooked the plain sevai, it is fun to make it into two or three different types by adding the appropriate seasonings and other ingredients. No Cook Confections - Quick & Easy Date-Almond, Cashew-Coconut, & Date-Walnut Bites

Happy New Year everyone! I wanted to start the New Year with a sweet, healthy option for satisfying the craving for a little sweet something. These quick and easy Date Bites are delicious little confections for those times when you want something sweet but healthy.  Although similar to the digestive  Masala Date Bites , these confections are exactly that - simply little confections to satisfy a sweet tooth! - so use only a smidgen of spices. They really are very easy as well as quick and take only about 10 minutes to make plus chilling time. Date Bites store well in the fridge; if longer storage is needed, they freeze well also. NOTES: If the dates are soft and moist, use them straight up. If they are on the dry side, sprinkle with about 1 or 2 tablespoons of warm water, let them soak for 10 minutes or so until the dates are soft, then proceed. Lemony Linguine With Eggplant & Red Onions

Lemony Linguine & steamed carrots Simple and delicious and spicy with a little green or red chile, Lemony Linguine makes a wonderful lunch, dinner or even as a starter. If eggplant is not your thing, use asparagus, zucchini or other favorite veggies and adjust cooking time accordingly as some veggies cook quicker than others. I used red onion to compliment the eggplant; any type may be used including scallions or leeks. 2 servings Ingredients: 4 oz Linguine 1/2 Onion, chopped 1 hot green chile, minced OR 1 generous pinch Red Pepper Flakes 1 small Japanese/Italian/Chinese Eggplant, julienned 3 cloves Fresh Garlic, finely minced 2 Tbsp EVOO Salt & freshly ground Pepper 4 Tbsp Flat Leaf Parsley, finely chopped 1/2 Lemon/Lime, zest and juice 2 Tbsp Pine nuts or Slivered Almonds, toasted Method: Heat a large skillet; add the oil and when oil is hot add all the veggies, with salt and pepper to taste. Ripe Plantain Curry (Nendra Pazha Pulisseri)

Nendra pazha pulisseri is another delicious Kerala classic to rival the popular Mango Pulisseri . Both are family favorites and quite easy to prepare. The naturally sweet pulisseri gets its sweetness from the ripe plantain - Nendra pazham in Malayalam! It is divine when paired with the Bitter melon fry ... I could wax poetic about the incomparable deliciousness about this combo. A bowl of freshly cooked hot rice with pulisseri and bitter melon fry .... yum! This delicious pulisseri could do double duty as a pachadi (sweet side dish) in a feast menu during Onam festival or other special occasions instead of mango or other pachadi.  This pulisseri is vegan and gluten-free too! Although traditionally pulisseri is made with yogurt, I used cashews to give that rich creaminess to this dish and did not miss the yogurt at all. Baked French Toast (Eggless) Casserole

Simply Delicious!  are the only words that come to mind.  Made this as a breakfast/brunch treat and  my family loved every bite! I served this easy to prepare casserole with a platter of luscious fresh fruits and mugs of steaming hot chai for a super breakfast :-). I have made this from whatever bread is handy (I use wholegrain usually) - turns out luscious every time.  Great for using up good bread that is past its prime - day old/stale bread is great in this recipe.  Since most of the work is done the night before, it is a snap to bake in the morning. Note:  We find that the casserole is sweet enough and do not add any extra syrup when serving.  But if you like it sweeter, you may serve it with additional syrup on top. 8 Servings Ingredients: 1 loaf unsliced Wholegrain French, Italian, or Sourdough bread Blend together: 1 block silken tofu 2 cups any Non-dairy Milk 2 Tbsp Brown Sugar 1/2 tsp Sea Salt 1 tsp Vanilla 1 tsp Cinnamo...

Fragrant Pear Cake

Here is a fragrant and fabulous pear cake to wow family and friends! A good use for those over-ripe pears too soft to eat out of hand; pears lend their moist fragrance and sweetness to this luscious cake. You may use soy, coconut, cashew, almond or rice milk.  The spices make this cake so fragrant and yummy; do add the nutmeg because pears and nutmeg are a match made in heaven! I don't usually frost any of the cakes; but if you like to, a sprinkle of powdered sugar is nice.  Or make a simple icing by combining a cup of confectioners/powdered sugar with a little vanilla and lemon juice or a little milk and drizzle over the cake. Baked Appams (Dynamite Spiced Muffins)

It is as flavorful a combination of veggies to please the palate as it is a colorful delight for the eyes! Feel free to experiment and find your own special combination of veggies according to the season or your family's preference. Black Beans, Corn and Jack Cheese Casserole

This good looking and great tasting dish serves double duty as a main dish or an appetizer; it is great for pot luck too. It is not only incredibly easy, but also makes a very healthy snack or even a meal. It can be assembled a day ahead and baked when ready to serve. Serve with any salsa like Salsa I or Salsa II or avocado salsa or Simple Guacamole with lots of fresh, warm, corn tortillas or tortilla chips. The combination of beans and corn provides abundant protein. They provide goodly amouts of other nutrients including fiber and are naturally Gluten-Free.
