Mushroom Fazzoletti With Soft Creamy Polenta

Mushroom Fazzoletti is delicious over polenta, pasta, toast, or other grains. This recipe is my recreation of a lovely dish made with trumpet mushrooms we enjoyed in a lovely vegan restaurant in Washington DC. Although it is delicious served over any pasta or purchased/homemade regular polenta, we particularly enjoy it served over soft creamy polenta . I make the polenta in the Instant Pot which makes it a breeze to have everything ready in record time without undue attention or stirring; plenta could be made in a regular pressure cooker as well. While the commonly available mushrooms work fine, other flavorful mushrooms would be awsome additions if you can get them. Fresh herbs and tomatoes are important for Fazzoletti, as they lend a more delicate flavor than dried or canned. Artichoke & White Bean Salad

Turn frozen artichoke hearts into this fabulous salad that can be served warm, cool, or cold with just a few ingredients. You may use canned beans also; about 2 standard cans should do it.  Ingredients: 1 cup Great Northern Beans 1 clove Garlic, minced 1 Shallot, thinly sliced 1 Lemon, juiced Salt and Pepper to taste 1 tsp Olive oil 1/2 medium Onion, diced 2 Garlic cloves, finely minced 2 Ripe Tomatoes, diced 2 (9 oz) pckges frozen Artichoke Hearts 1 tsp Lemon Zest 1/2 tsp Salt, to taste 1/2 cup Kalamata Olives 8-10 fresh Basil leaves, torn Freshly ground Black Pepper Method: Prepare the beans: sort, soak overnight, and rinse the beans. Cook in water to cover until soft but not mushy. TOFU TIKKA MASALA (VEGAN & GLUTEN-FREE)

Tofu Tikka Masala is a hearty dish and although it sounds like a lot of work, it can be done in steps. Both the tofu and the sauce maybe prepared a day ahead and assembled the next day. Making the sauce one day ahead helps to make it a lot easier; and the sauce is fabulous after it gets a chance to meld all the flavors. Do try it; when you taste and see how delicious it is, you will agree it is worth the effort. Serve with plain rice, any pulao or biriyani, roti, naan etc. accompanied by a platter of sliced cucumbers, tomatoes, and onions or a raita. Naturally gluten free, we simply adore Grilled Corn Salad With Smokey Hatch Chiles; again, a great use of leftover grilled corn after a barbecue just like the Grilled Corn Salad With Maple Dressing ! Masoor Dal With Spinach & Tomatoes, Rice Masoor/Red/Pink Lentils are actually neither red nor pink but a peachy salmon color! They are a common and popular ingredient in many cuisines. Quick cooking  and chockful of nutrition, they can fill the bill no matter which cuisine. They are the quickest cooking member of legume world (takes only 20 minutes!). The combination of rice, dal, and greens never loses its charm for me; so simple yet wholesome and delicious. Serve Dal With Spinach and Tomatoes over rice, other grains, or with roti in the Indian Style or as a stew/soup. Either way it is hearty comfort fare and a delicious winner regardless of the season. Veggie Ceviche! (Vegan Tofu/Veggie Salad)

Veggie Ceviche!  Veggie Ceviche is an amazing recipe if I say so myself! You have to taste it's limey, cilantro goodness to see how delicious it is. The tofu truly gets so flavorful that one can eat a whole bowlful even without any of the additional ingredients - yes, I did exactly that! There are 3 ways to make this ceviche; with tofu, cauliflower (raw or cooked until just tender), or hearts or palm - all equally delicious. This ceviche is an easy make ahead recipe and a great addition to the appetizer/starter, lunch, or a light meal repertoire. NOTES: Fresh limes work the best for this recipe; let the limes warm up to room temperature if chilled. If the limes are not juicy, or they are small, you may need more limes. The tofu/veggies may be marinated up to a day in advance. To insure fresh taste and flavor, add the tomato and cucumber no more than about an hour or two before serving. Mexican-Style Many-Layer-Dip With Homemade Chips

Many-Layer Dip Colorful, delicious, guilt-free Mexican-Style Many-Layer-Dip, irresistible  with the  cahew/tofu “cream”, and served with homemade chips or tortillas, is a delightful dish for a few or a crowd. Choose cashews or tofu to make the " cream ". I call this  Many-Layer-Dip  since it has many lovely layers contributing  great taste,  colors, flavors, fiber, and amazing nutrition. Choose to include all the ingredients, a few only, or add even more - this recipe is very adaptable. Assemble the Many-Layer-Dip no more than 2-3 hours ahead if you want to keep it looking pretty. Although it will still be fine in taste and safe to eat after that time, some of the  the layers will not stay distinct as some of the  juicy layers start to mix with those next to them. Smoky Lentil Soup With Picada

We love all things lentil and this Spanish-style lentil soup is a  favorite!  Lentil soup can serve as a main dish, light meal or as a starter.  The soup begins with preparing a flavorful base called sofrito, common to most soups, an aromatic combination of onion, celery, and  carrots (love to add lots of carrots which add color, texture, and sweetness) plus garlic, tomato and smoky roasted peppers. The soup is finished with a nutty picada, a thick pesto-like sauce made of toasted bread, almonds, garlic, parsley, and a bit of olive oil. Typically the bread is fried in oil; but in order to keep the oil to a minimum, I opted to toast it instead. The soup is delicious just as it is, but the picada takes it to the next level. Picada is usually added towards the end of cooking. Leftovers are fabulous for about a week or maybe frozen for up to 3 months. Kaima/Kothu Idli, Podi Idli, Idli Upma & Idli Chaat (Leftover Idli Makeovers)

Leftover idlis got a fabulous make-over by reinventing them as Kaima Idli, Idli Chaat, Podi Idli, and Idli Upma, etc.  Although typically made from leftover  idlis , they are amazingly tasty and make great starters, snacks, or even meals. My family loves Kaima, Chaat, Podi, and Upma variations and make a meal of them! Kaima Idli was apparently popularized in a South Indian restaurant; now they are not only made and served in many Southern as well as Northern Indian restaurants everywhere in various avatars including Idli Chaat. I have eaten different versions and all were delicious. Notes: Make the tomato suace first and when ready to serve, you can fry the idlis and mix with sauce. The tomato sauce is absolutely delicious and may be served as a sidedish with any meal; I like to make double or triple the amount to have extra. Kaima Idli C old idlis are best for frying/baking.
