White Bean & Carrot Spread/Hummus Or Dip

Image
White Bean-Carrot Dip With Rice Crackers & Veggies White Bean & Carrot Spread/Hummus Or Dip is delicious as a starter with veggies or crackers; our favorites are assorted veggies along with rice crackers. It is great to spread in sandwiches and wraps also. This gorgeous dip gets its lovely color from the carrots. It is naturally gluten and dairy free as well as oil free; hence guilt free too! White bean dip is a delicious alternative to the regular hummus made with garbanzo beans and is just as easy to make. It is fabulous! Notes: Check this post on cooking beans if you like; cooking beans is not hard and procduces delicious as well as economical results. The best part is that you can put aside or freeze the extras for another time or another dish like Turkish Bean Soup or Greek Fasolatha ! Canned beans maybe used as well; one 15 oz can of great northern or cannelini would probably be about the right amount (please measure to check as I am not sure the amount of...

Almond-Sunflower Seed Sandwich Spread Or Dip

A quarter of a cup of this spread has a goodly amount to protein - 7g! and of course plenty of other good nutrients. Similar to the Green  Seed Butter  and the Chickpea Spread , it is a lovely dip or spread with an abundance of nutrition and great taste. Variation: Use 1/2 cup each of sunflower and pumpkin seeds. A pinch of cayenne is great in the spread. 2 or 3 tablespoons of vegan mayo maybe used also instead of the lemon juice and mape syrup. About 5- 10 servings Ingredients: 1 cup raw sunflower seeds 1 cup raw almonds 1/3 cup finely chopped celery 1/4 cup finely chopped red onion 2 tablespoons chopped fresh Dill or Parsley 1-2 tablespoons maple syrup or agave nectar 2 tablespoons lemon juice 1 teaspoon ground black pepper 1/2 teaspoon sea salt Optional Ingredients 1/3 cup finely chopped pickles 1/3 cup finely chopped/grated Carrots 1 teaspoon kelp granules Method: Put sunflower seeds and almonds into a large bowl, add plenty o...

Chickpea (Garbanzo Beans) Salad Spread for Sandwiches & More

Chickpea Spread is a wonderful in so many ways - not just on regular sandwiches and wraps but as a salad and filling for a cool lettuce taco or as a dip to scoop with your favorite veggies or chips! Stuff pretty little peppers, tomatoes, lettuce cups, endive, celery, etc. for a delicious and easy snack or starter. Cook your own chickpeas or use canned; I cook a big batch so there is enough for a couple of different recipes as well as freeze a portion or two for another day as they freeze well. Notes: 1. I do the whole thing using the food processor; if you like the veggies chunkier, the carrots and celery may be finely chopped with a knife and added at the end and pulsed once or twice just to mix. 2. Homemade or purchased vegan mayo works quite well. 3. Other herbs like basil, cilantro, chives, etc may be added instead of or in addition to the parsley. INGREDIENTS: 1 Handful raw or roasted Almonds, around 1/4 cup 2 ribs Celery include leaves, coarsley chopped 1 ca...

Hema's Indian Style Coleslaw (Marinated Veggies)

Image
Delicious Indian Coleslaw is a hit! - everyone who tried, absolutely loved it. Hema calls it Vegetable Achar or Achards Des Legume s - as the veggies get a bit pickled in the marinade. Use as a topping on any bread for a lovely, fresh tasting bruschetta, as a filling for a spring roll, wrap, or a sandwich, and as a side dish. With all the fresh tasting and crunchy veggies, Indian Coleslaw really satisfies one's craving for the munchies :-). So go ahead and make a big batch ... you'll be glad you did. Note: My favorite is apple cider vinegar and I do not use any sweetener. Any vinegar may be used including rice vinegar. When you use a vinegar other than seasoned rice vinegar, you might like to add about 1/2 tsp sugar, agave syrup, or other sweetener to the coleslaw to mellow the bite of the vinegar.  Hema's Indian Coleslaw (photo by Hema) Ingredients: 1 Tbsp brown Mustard Seeds, coarsely ground 1/2 tsp - 1 Tbsp Oil 1/2 medium Onion 1-2 cloves Garli...

White bean dip is a delicious Italian alternative to the regular hummus made with garbanzo beans and is just as easy to make. It is fabulous as a dip or sandwich filling. Canned Canellini or great Northern beans may be used instead of the freshly cooked. I find that making this dip with the freshly cooked warm beans produces a superior result compared to that made with canned beans even without any oil added. Check this  post on cooking beans  if you like; cooking beans at home procduces delicious as well as economical results.
