Cato's Lentils (Ancient Roman Lentil Stew/Soup)

Cato's Lentil Stew proves that the ancient people knew how to prepare and enjoy their food! Although it is simple, it is nonetheless quite delicious. I know this is one dish that I will make again and again. It is adapted from The Classical Cookbook by Andrew Dalby and Sally Grainger. I tweaked the recipe just a little - left out the rue as it is a plant that causes mild to severe contact dermatitis and didn't want to find out what it would do to my insides when ingested ... since my other motto (besides "waste not") is ... When in doubt, leave it out .... Although rue was a common pot herb in antiquity, it lost favor and faded out of the realm of culinary art. "Garum" or fish sauce also got axed - no creature extracts in my food please :D! Vegan Corn Chowder (Gluten & Dairy Free Corn Soup With Leeks)

Vegan Corn Chowder Here is the vegan corn chowder I made for friends on a gluten- and dairy-free diet. It is just as delicious as the regular chowder. Using the corn cobs and leek trimmings make for a wonderfully flavorful broth. If fresh corn is out of season or not feasible to use, you will still have a fabulous chowder using frozen corn - just substitute 1 lb frozen total. I made the soup with soy milk initially but it seemed too thin. As I was trying to figure out what would make it richer and more flavorful, I got the idea of adding coconut milk :-). The coconut milk turned what would have been a good soup into one that was absolutely scrumptious! The amount of cilantro might seem like a lot, but you need that to bring out the sunny citrus-y flavor that a smaller amount cannot. For all its assertiveness when fresh, cilantro becomes quite mild when heated. Celery, Leek & Potato Soup

A very simple and soothing soup that is very satisfying too whether you make it cheesy or not. Pat K. introduced the cheesy version of this luscious soup to us a long time ago. I have long since lost the piece of paper with the recipe but who needs it when it is indelibly etched on my brain? Pat prepared it with onions, celery and potatoes and served it with freshly baked carrot muffins and a Waldorf salad - I still remember the taste - yummy! I make this soup often with leeks instead of onions plus a few zucchinis too without any cheese or milk. You are not limited to using just these veggies; use any veggies you like. Now the big question is: do you want it with or without cheese - vegan or not - which one? Either way you end up with one delicious soup! Here is my vegan version; you can make it cheesy if you wish. Cheesy Potato Corn Chowder (Leek Potato Soup With Corn & Cheese)

Occasionally we start out to do one thing but allow ourselves to go with the flow and end up with something amazingly fantastic. This chowder is an example of one of these events. Serendipity! I started out making a 'leek-potato soup' and Chellu wanted to help. It was fun cooking together and the spirit of adventure was high. Before long Chellu was bursting with suggestions of additions or substitutions ( what if we add some of this and what if we added this instead of that ... etc) which sounded pretty good to me and that is how we ended up with this Cheesy Potato Corn Chowder also known as "What If Soup". Lentil Salad With Walnuts

Protein and fiber-rich lentil salad is perfect for summer lunches and picnics! The walnuts provide extra protein as well as healthy Omega-3 oils. 4 to 6 Servings Ingredients: 1 cup Lentils, green, brown, or black 2 Tbsp Extra Virgin Olive Oil Lemon juice to taste, about 1/4 cup A splash (2 tsp) of White Wine Vinegar Salt and Freshly ground Black Pepper to taste 1 clove Shallot, thinly sliced 1 cup thinly sliced Celery 1/4 cup chopped Italian Parsley/Cilantro 1/2 cup sliced Leeks or Green Onions 1 cup finely diced carrots and/or Red Bell Pepper 1/4 cup Mint leaves, cut into thin slices 1/2 cup walnuts, coarsely chopped Method: Sort the lentils for debris, wash well and cook in water to cover until tender but not mushy. Gratin: Potatoes, Butternut Squash, And Sweet Potatoes With Leeks & Fennel

Gratin is a wonderful and absolutely delicious make-ahead dish perfect for pot-lucks and parties. The vegetables are layered like a lasagna with the fragrant leeks and fennel and some cheese strewn between each layer. It is even better reheated the next day; so do make some extra :). I love to make this particular combination of autumn veggies for our Thanksgiving or Holiday dinner. The hot gratin is lovely served over the greens - which wilt and add another dimension to the taste sensation. Ishtu (Kerala Style Creamy Vegetable Stew With Coconut Milk)

Ishtu? or is it Olan - that is the question! Both are stews made with coconut milk and scented with fresh curry leaves and fragrant coconut oil; but Ishtu is typically made with potatoes and onions whereas Olan is made with pumpkins/winter squashes and black-eyed peas or karamani (called Red Chori in Hindi). Another difference is that Ishtu often includes ginger; olan does not. Both are delicious served with other tangy/spicy dishes such as Mor Kuzhambu , Sambar , etc. Ishtu (perhaps a corruption of the word 'stew') a mild delicious stew, is often served with pancakes like Dosa or Aappam, or as a side dish. Ishtu with Idiappam (fresh Rice Noodles) is a traditional breakfast combo popular in Kerala. This is one of my favorite versions of Ishtu with mild leeks (look like green onions on steroids :D) instead of the usual onions, and zucchinis to boost the nutrition, good looks and taste. Brown Rice Risotto with Seven Vegetables

Here is a much celebrated Italian rice dish; I have added a little Indian influence of Ghee and sambar powder :)! It is similar to the Indian Kichdi or Bisi Bele Rice in idea as well as texture. Enjoy! I generally do not use any broth; the vegetables and the herbs provide ample flavor. If you like to use broth instead of water, you certainly can make home-made vegetable broth with all the trimmings from the vegetables and simmer them gently in fresh water to cover with a clove of garlic or two, a coarsely chopped tomato, an onion and a potato each, a sprig of each of the herbs mentioned below, and a little salt. When cool, strain and discard all the vegetable pieces and use the broth as you wish. If there is extra broth, it can be frozen for later use in soups or other recipes.
