Artichoke & White Bean Salad

Turn frozen artichoke hearts into this fabulous salad that can be served warm, cool, or cold with just a few ingredients. You may use canned beans also; about 2 standard cans should do it.  Ingredients: 1 cup Great Northern Beans 1 clove Garlic, minced 1 Shallot, thinly sliced 1 Lemon, juiced Salt and Pepper to taste 1 tsp Olive oil 1/2 medium Onion, diced 2 Garlic cloves, finely minced 2 Ripe Tomatoes, diced 2 (9 oz) pckges frozen Artichoke Hearts 1 tsp Lemon Zest 1/2 tsp Salt, to taste 1/2 cup Kalamata Olives 8-10 fresh Basil leaves, torn Freshly ground Black Pepper Method: Prepare the beans: sort, soak overnight, and rinse the beans. Cook in water to cover until soft but not mushy. It is great to spread in sandwiches and wraps also. This gorgeous dip gets its lovely color from the carrots. It is naturally gluten and dairy free as well as oil free; hence guilt free too! White bean dip is a delicious alternative to the regular hummus made with garbanzo beans and is just as easy to make. It is fabulous! Bread-Free "Bruschetta" ( Veggies Filled With White Bean Salad)

Bread-free Bruschetta Bread-free Bruschetta is a great lean way to serve delicious bean salads. These are perfect as appetizers or starters and won't fill you up to spoil the dinner. Black eyed peas, cannellini or Lima beans etc. may be served in a similar fashion. Fresh or roasted vegetables form the base instead of the traditional bread or crostini (crostini = 'little toasts' in Italian). Small romaine or butter lettuce leaves, Belgian endive, red, yellow, or orange bell pepper boats, hollowed out tomatoes, cukes or zucchini, all work beautifully as delicious edible containers for hearty bean salads. Fasolatha (Greek White Bean Soup)

Fasolatha, a simple, but wonderfully flavorful and satisfying soup is served all over Greece. It is amazing tasting with just a few basic ingredients. Greeks are very generous with the olive oil; I prefer a moderate amount. I have also added turmeric to make sure we get our daily dose of curcumin to keep our brains healthy - as you know "a little turmeric a day keeps lesions away"! A variety of beans called "gigantes" are used in Greece; they look like large lima beans. I used Great Northern beans here but have also used large Lima beans with great results. A good quality tomato paste may be used if fresh tomatoes are unavailable. Use about 2 to 3 Tablespoons in the recipe.
