Easy 10 minute Noodles I, Italian Style

Freshly cooked sinuous pasta studded with fresh veggies and flavored with fragrant herbs is a feast for the eyes as well as the palate. Easy 10 minute Noodles I, Italian Style really takes only about 10 minutes to prepare especially when using fresh noodles. I use gluten free noodles; but if gluten is not a concern, any favorite noodles maybe used. Notes: Dried noodles maybe used to prepare this recipe but take a few of minutes longer than fresh; use 2 ounces and prepare according to package directions. When preparing the veggies, I often chop more than I need for one recipe and save them for another day. Using the special julienne peeler makes quick and easy work of making thin strips of carrots and zucchini. You may use a spiralizer also to make veggie strands. Curried Potato Hash With Tofu & Summer Vegetables is a bright and beautiful brunch dish with toothsome veggies to make it hearty! Although typically breakfast or brunch dishes don't include veggies, here the tofu, sweet corn and cherry tomatoes turn the traditional potato dish into a treat for the eyes and tastebuds as well as a powerhouse of nutrition.  It is quite easy and quick - roast potatoes and tofu the day before and reserve in the fridge; in the morning just put everything together, and voila! you have a dainty dish to start the day right. Veggie Sloppy Joes aka Quick Pav Bhaji is a melange of vegetables that may be mashed well or left  a bit chunky. It is as nutritious as it is delicious. Traditionally Pav Bhaji is served over toasted and butter-slathered soft buns specially made for this dish; you may use any buns, bread slices, flat breads, pita, or tortillas. Pav Bhaji Masala is readily available in Indian Markets. If Pav Bhaji masala is not handy, no worries. Here's the recipe for it.   Pav Bhaji Masala/ Spice Mix : 1 Tbsp Coriander seeds 1/2 tsp Cumin seeds 1/2 tsp Fennel seeds 1" piece Cinnamon stick 1 black Cardamom, use seeds only 1 tsp Black Pepper 3 Cloves 1dry Red Chile 1 tsp Aamchoor (Dry Mango Powder) Combine and grind the above spices to a fine powder. Rice Noodles With Assorted Vegetables (Vegetable Sevai/Rice Noodles) is a pretty easy and delicious Gluten Free recipe perfect for brunch, lunch or dinner  as well as a teatime treat too. Traditionally, rice noodles were prepared fresh but the packaged noodles make it so much easier and quicker. The dish is South Indian Style when served with the arachu kalakki or chutneys; it has Chinese flavors when served with the chile-garlic sauces! NOTES: 1. Allow the rice noodles to cool a bit; cool noodles will help prevent stickiness. 2. The vegetables maybe varied according to preference or availability. Lentil-Oats Loaf Muffins Lentil-Oats Loaf Patties  Lentil and Oats Loaf is a toothsome and very satisfying dish, my special Thanksgiving Day recipe of all time! The basic mixture can be prepared in many versatile ways: as muffins, a loaf or patties - take your pick :). I love making the muffins or patties as they are perfect for individual servings and freezing - and the bonus is that they cook faster too! You don't have to wait for Thanksgiving for making this, it is great for any occasion, special or not. Do use the old fashioned rolled oats and not the steel-cut oats. It is great to make a big batch of the Lentil-Oat muffins or patties; they freeze and reheat well.
