Nutmeg-scented Wholegrain Pear Muffins are gluten and dairy free; they are oil-free also if you omit the optional oil. These wholesome muffins are as delicious and tender as they are nutritious. They are one of our favorites for breakfast or tea time. Do add the chia and flax seeds for the added nutrition if you can. When pears begin to get soft and squishy, don't throw them on the compost heap; save them to make these fabulous muffins! You can use any variety of pears for these; I have used a large brown Bosc , Bartlett or the Anjou variety; all are great. I have not tried it with the crisp Asian pears - they don't stick around, we enjoy them fresh and crisp! If you'd like a version of muffins using whole wheat flour, here's the recipe . Corn muffins are so perfect with a piping hot cup of tea, coffee, a bowl of hearty Chili or soup. The soup was ready - yummy leek-potato  where broccoli was substituted for the zucchini. I was so set on making corn muffins to go with it, but alas! there was not a sign of either butter or buttermilk in the fridge. Determined not to be stymied by the absence of the dairy duo, I decided to try out some substitutions. And ........ the muffins turned out fantastic! So here is the amended recipe. Soy, rice, or nut milk may be used. Chocolate Chango Bars II (Eggless Cookie Bars)

After reading this post, I used ground up flax seeds as egg replacement and wow! it was the best batch of Chango Bars yet- somehow moister and chewier and altogether seriously yummy. And since there are no raw eggs, no worries about Salmonella poisoning either if you like eating the uncooked cookie dough :). I got a bag of whole flax seeds and give them a whirl in my coffee spice grinder as needed: one Tbsp flax seeds plus 2 Tbsp water for each egg called for in the recipe. I had been using cornstarch plus water for a long time but now that I have discovered flax seeds, I prefer that over the cornstarch since they add nutritive value too. While I was cutting out the eggs, I cut out the oil too from my first version of Chocolate Chango Bars without any adverse effects; so now we have a healthier (fat and cholesterol reduced) as well as a better tasting recipe. Happy Mother's Day Everyone! I am collecting recipes that remind us of our mothers. I have posted the recipes for Aviyal and Molagushyam , two of Amma's favorites. Please feel free to send me yours. This recipe comes from my friend Ellen's mother Virginia Burke of the Mayflower ancestry. Mrs. Burke majored in Home Economics and her specialty was Baking. Ellen fondly remembers her mother serving these warm cornbread muffins with butter and honey as after-school treats. The only thing that is changed from the original recipe is that we have substituted butter for drippings and I also leave out the egg and instead use 1 Tbsp cornstarch dissolved in 1/4 cup of water or 1 Tbsp ground Flax seeds and water. Serve these muffins or bread with roasted corn chowder , mung dal soup , or your favorite soups. 12 muffins.
