Everyday Lentil Soup

We love all things lentils and this Everyday Lentil Soup is a favorite! Lentil soup can serve as a main dish, light meal/snack, or starter. This luscious soup enriched with the trio of onions, garlic, and carrots can stand alone or served with grains or bread. According to Hema, this soup is based on Mauritian recipe where Indian and local ingredients are combined to produce the unique dishes reminiscent of Indian cuisine. The soup begins with preparing a flavorful basic seasoning of toasted cumin seeds, onions and garlic common to most dals along with carrots which add color, texture, and sweetness plus tomato for a little tang. I like to cook the lentils by themselves and add them to the soup after the seasonings are ready. Then the soup is simmered with fragrant thyme and finished with a sprinkle of parsley or cilantro.  Leftovers are fabulous for about a week in the fridge or maybe frozen for up to 3 months. Qinoa Bowl With Marinated Tofu & Spicy Chickpeas

This protein-packed Quinoa Bowl is so full of tasty ingredients that each bite is a treat! Marinated Tofu and the Seasoned Chickpeas could stand alone as starters, snacks or side dishes; so I often double the quantities so there is plenty for extras and for another recipe. This recipe is great for batch cooking; make the components in double or triple quantities as desired so you can mix and match for a few meals. The tofu, chickpeas, and roasted veggies maybe added to pasta or salads to change them up. NOTES: Instead of the quinoa, other favorite grains like farro, brown and wild rice, millet, or a combination of grains maybe used. Marinate Tofu and Chickpeas at least 30 minutes or up to 24 hours ahead. Coleslaw With Creamy OR Lemony Dressing is a delicious way to include nutritious cabbage in your diet. I love anti-oxidant and anthocyanin rich red cabbage for this recipe; green cabbage or a combination of red and green cabbages would be fine too. Both the lemony and creamy dressings to choose from - are utterly delicious. NOTES: 6 cups of cabbage might seem like a lot; when salt is added it wilts and reduces to a much smaller amount! Maple Roasted Carrots With Citrusy Carrot Top Chimichurri uses the carrots as well as their tops, a delicious, no waste, naturally gluten-free and vegan recipe. Multicolor carrots work really beautifully in this recipe. Maple Roasted Carrots are a perfect side for any holiday meal. Chimichurri is a wonderful condiment for adding to anything you like, pasta, soups, stews, sandwiches, or salads. The chimichurri may be frozen; an ice cube tray is handy for this. When frozen, store the frozen cubes in a resealable freezer plastic bag or container. To thaw, remove the required amount from freezer and allow to come to room temperature. Carrot Creme (Easy & Delicious Creamy Carrot Soup)

Carrot Creme or Creamy Carrot Soup is quite simple, yet, so delicious! Although we call it "Creme", there is no cream or other fat/oil in this gorgeous soup. Carrot Creme, just like its cousin Butternut/Pumpkin Creme , is naturally gluten, dairy, and fat free; the nuts and coconut provide creaminess and a small amount of natural fats. Just a few basic ingredients contibute to a wonderfully scrumptious and creamy sunset-colored soup!  An abundance of fresh carrots prompted this recipe. The pepper provides a nice contrast to the natural sweetness of the carrots and nutmeg takes it to the next level of carroty scrumptiousness. As there aren't many steps to follow other than the basic prep, the soup comes together quite quickly. Tasty Mushroom Burger, naturally Vegan and Gluten Free burger, is toothsome and delicious one of the best results in burger recipes. The oats, nuts, and rice flour etc help to form well without falling apart. If you do not eat fungi, check out the  Lentil Loaf  and  Black Bean burgers  recipes for patties without mushrooms. Notes: All the vegetable ingredients maybe finely chopped or grated by hand or by using a food processor. I used the food processor for finely chopping all of the ingredients which made it quick and easy; as the last step, I pulsed the sunflower seeds and oats and that cleaned the bowl nicely - an added bonus! Black Bean Burgers (Gluten and Dairy Free)

Black Bean Burger Burgers are popular with or without a bun piled with all the traditional additions of lettuce, tomato, pickles, onions, etc or  tucked inside the pockets of pita breads with your favorite fixings for a very satisfying meal. Black Bean Burgers are not exceptions; they are fabulous additions to the comfort food repertoire. I like serving these burgers on crisp shredded Romaine lettuce along with avocado slices, tomatoes and onions with some fresh salsa, tomato chutney or  tomato sauce for topping. The burgers may be made a day or two ahead and grilled with a little barbecue sauce to warm them. These burgers are not as tough as the store-bought ones and hence need to be handled gently while cooking and grilling. I used crushed tortillas and added a bit of organic rolled oats to bind; the tortillas add to the southwest flavors along with the spices. Smoky Lentil Soup With Picada

We love all things lentil and this Spanish-style lentil soup is a  favorite!  Lentil soup can serve as a main dish, light meal or as a starter.  The soup begins with preparing a flavorful base called sofrito, common to most soups, an aromatic combination of onion, celery, and  carrots (love to add lots of carrots which add color, texture, and sweetness) plus garlic, tomato and smoky roasted peppers. The soup is finished with a nutty picada, a thick pesto-like sauce made of toasted bread, almonds, garlic, parsley, and a bit of olive oil. Typically the bread is fried in oil; but in order to keep the oil to a minimum, I opted to toast it instead. The soup is delicious just as it is, but the picada takes it to the next level. Picada is usually added towards the end of cooking. Leftovers are fabulous for about a week or maybe frozen for up to 3 months. Crunchy, Munchy Cabbage Salad

A simple yet wonderfully colorful crunchy and delicious salad! All the veggies plus the almonds and sesame provide ample fiber, vitamins, anthocyanins, and even a good amount of protein. Cabbages and Kale belong to the Brassica or commonly known as cruciferous vegetables family along with broccoli, cauliflower and others. The benefits of the Brassicas are numerous; they not only provide nutrients but also are anticancer, anti-inflammatory as well as protection from other diseases. All of the veggies and nut/seeds and dressing maybe prepared ahead and tossed together just before serving; a great one for the weekdays. The salad maybe prepared with one type of cabbage alone; other veggies maybe added or omitted also. Brussels sprouts, Napa Cabbage, broccoli or cauliflower, etc make great additions. Split Pea Soup (Almost Andersen's Famous Pea Soup)

Split Pea Soup was introduced to me at Pea Soup Andersen's Restaurant near Solvang, California many years ago by dear friends P & C. I have been an avid fan ever since. Many were the bowls of delicious, naturally vegan, and gluten free all-you-can-eat soup that we have happily eaten then and in subsequent visits there and at their other locations. We loved the soup so much, I recreated the recipe at home based on taste and was delighted with the results. Not only family members but lots of friends too have been the happy recipients of this amazing soup. Until recently I did not know that Andersen's has their famous recipe printed on the bags of split peas they sell and was quite happy to see that my recipe is very close!
