Here's India's classic quencher for those warm summer days just on the horizon. It is a snap to make with or without a blender. If you don't have a blender, don't worry - just use a wire whisk or a rotary beater and some elbow grease to whip up a cooling glass of lassi.
Rose water is readily available in Indian and Middle Eastern markets.
4 Servings
Ingredients:
1 cup plain, unsweetened Yogurt, or non-dairy Yogurt
1 small fresh Lime
Sugar to taste
A pinch of Salt
2 cups cold water
1 tsp Rose Water (Optional)
Ice Cubes to serve
Method:
Cut the lime in half and squeeze the juice.
Place the rinds for soaking in the cold water.
Place the yogurt, lime juice, salt, sugar, and a few ice cubes in the blender and give it a whirl.
Pour the yogurt mixture into a serving pitcher.
Strain the lime rinds from the cold water and discard.
Rinse the blender container with the lime soaked cold water and add to the yogurt mixture and mix well.
Stir in the rose water if using. Taste and add more sugar and/or rose water to your taste as needed.
Serve in tall glasses with ice cubes if you wish.
Note: If you like thicker lassi, add less water or none at all and adjust the sugar, lime, and rose water accordingly. My children like it very thick - so we add a cup of ice cubes instead of the water.
